my edible ode to marination mobile
corn tortilla, with korean red pepper paste mayo and sesame-rice vinegar slaw.
it's probably news to no one, but they now park two blocks down from my work every tuesday. this serendipitous and bright piece of news after I emailed my boss a week prior to ask if we could host them in our own parking lot. at least nine people from work went down there. I had one of their tofu tacos again after making this, and now have to figure out how to replicate their sweet caramelized onions, scallions and the most tender tofu i've ever bitten. for my own records, it was heavy on the lime and ginger, i think.
