Vegan March - Day 2


Same as day 1...with the addition of some edamame in the afternoon and some satsumas post-dinner. Have to keep cramming it in to stay full now.

Breakfast: whole grain toast with refried beans, avocado, and tomatoes; coffee with cashew milk

Snack: grannysmith apple with PB

Lunch: whole grain pasta with roasted broccoli, garlic, and red pepper flakes; muhammara dip with sugar snap peas

Dessert: lemon coconut cake c/o patricia!


Snack: Edamame


Dinner: leftover noodles and eggplants from seven stars pepper

More snack:  three satsumas
